- 1 cup Basmati rice
- 1 Chopped onion
- 1 Chopped tomato
- 2 tsp Chili powder
- 1/2 tsp Turmeric powder
- 1 tsp Coriander powder
- 1/4 cup Curd
- 1 Bay leaf
- 1 Star anise
- 1 Cardamom
- 1 Stone flower
- as per need coriander leaves
- 1 tsp Ghee
- as needed Water
- as per taste Salt
- For masala paste:-
- 6 Shallots
- 7 cloves Garlic
- 1 pieces Chopped ginger
- 4 Green chilli
- leaves Coriander
- As needed Mint
- 1 Cinnamon
- 4 Cardamom
- 1-2 Cloves
- 1 Maze
- 1 Nutmeg
- as required Ghee
Instructions to make to make Kushka /plain Biryani
- Soak the basmati rice for about 30 minute
- Heat some ghee in a pan and add a piece of cinnamon, cloves, cardamom,maze and nutmeg powder, shallots, garlic, ginger paste and green chilies
- Saute this for about 2 minutes and add coriander leaves and mint leaves and cook this for about 10 minutes
- Let the mixture cool down and grind it to a fine paste
- In a pressure cooker, add some ghee bay leaf,star anise, clove, cardamom, stone flower and onions
- Saute the onion till they are golden brown in colour
- Add chopped tomatoes, turmeric powder,chili powder, salt and coriander powder and saute them
- Add the ground masala paste, and cook them until the raw smell goes away
- Add curd and mix well
- Add the soaked rice into the pressure cooker and add water
- Cook the Biryani on a medium flame for about 2 whistles
- Let the pressure subside and garnish the khuska with some freshly chopped coriander leaves
- Serve the khuska hot with some raita by the side
