- 1 green chilli chopped
- 1 tbsp crushed coriander seeds

- 1/2 tsp red chilli powder
- 1/4 tsp asofetida dissolve in water
- 1 tsp mutard seeds
- 1/2 cup grated carrot
- For sambar....1 bowl soak toor/arhar daal
- Chopped veggies of ur choice
- Oil for tadka
- Salt to taste
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 tbsp mustard seeds
- leaves Some curry
- 1 pinch asofetida
- Handful chopped coriander leaves
- 3-4 tbsp sambar masala
- Water as required
- 1 big chopped onion
- 1 big chopped tomato
- 2-3 tbsp tamrind pulp
- For coconut chutney... 1 cup grated fresh coconut
- 1/2 cup fresh curd
- 1 inch piece of ginger
- 1 green chilli
- 2 tbsp soaked channa daal
- Small piece of tamrind Or 1/2 tbsp tamrind pulp
- Salt to taste
- Black pepper to taste
- leaves Some curry
- 2 red kashmiri chillies
- 1 tbsp mustard seeds
- 1 tbsp channa daal
- 1 tbsp urad daal
- Oil for tadka
- Water as required
Steps to make to make Medu vada sambar and coconut chutney
- First of all add soaked daal in a cooker. Add water as required. Add some salt and turmeric powder. And boil till 2 whistels
- Take a pan. Add oil for tadka. Then add mustard seeds, curry leaves, asofetida and saute them for a mnt. Then add chopped onion saute it then add chopped tomato cook till tomato turns soften. Then add spices mix them properly then add chopped veggies. Cook them properly
- Then mash them with masher and put this cooked veggies in cooker and mix it with boiled daal. Put cooker on medium flame. Then add tamrind pulp and sambar masala make a boil so that all cooked veggies and spices mix well in boiled daal. Garnish with coriander leaves.
- For vada first of all add soaked daal and rice in a mixture jar and grind it like a smooth paste
- After grinding pour this mixture in a vessel and beat it with spoon for few mnts to prepare soft nd fluffy vadas.
- Then add asofetida water, chopped onions, green chili, curry leaves, coriander leaves, cumin seeds, crushed coriander seeds, salt and chilli powder to taste, grated carrot,mustard seeds and kasuri methi mix it well.
- Take a vok,. Add oil for trying vadas. Make it hot properly. Take some water in a bowl. Dip ur hand in water then pour mixture on your palm and shaped it as vada by making hole in it with ur finger and drop it gently in hot oil. Add more vadas one by one. Fry these vadas by flipping gently on low to medium flame so that they cook properly.
- Drop these vadas on a paper towel so that paper observed excess oil
- For coconut chutney.... Take a mixture grinder. Add all ingredients in it and grind in in a smooth paste by add water.
- Then take a pan. Add oil in it. Add mustard seeds, channa daal, urad daal, asofetida some curry leaves red chillies and saute it on low flame till daals turns golden brown
- Pour this tadka in blended coconut puree and urs chutney is ready to eat
- Then it's Tym to plating.... Take a bowl. Add sambar in it place vadas and drop some chutney on it and garnish with mint leaves
