- FOR RICE
- 2 cup Basmati Rice
- 6-7 garlic(finely chopped)
- 2 tbsp red chilli flakes
- 1 onion (finely sliced)
- 1/2 cup Coloured Capsicum (finely sliced)
- 1/4 cup boiled sweet Corn
- 2 tbspn Tomato Ketchup
- to taste Salt
- For Refried Beans~
- 1 cup Rajma (boiled and slightly mashed)
- 4-5 garlic (finely chopped)
- 1 tbsp Red chilli flakes
- 1/2 cup spring onion (finely chopped)
- 2 tomatoes (finely chopped)
- 1/4 cup tomato ketchup
- to taste Salt
- Sour Cream~
- 1 cup hung curd
- 2 tbsp Lemon juice
- as per taste Salt
- as per taste Black pepper powder
- For uncooked Salsa~
- 1 tomato (finely chopped)
- 1 onion (finely chopped)
- 1 tsp red chilli powder
- as required Coriander leaves
- as per taste Salt
- Other ingredients ~
- as required finely chopped spring onions
- 1 packet Nachos (any flavour)
Steps to make to make Mexican Burrito Rice
- Rice~ In a pan heat 2 tspn oil. Add finely chopped garlic. Saute until slightly brown. Now add onions and saute for a minute. Add chilli flakes and again saute for a minute.
- Add the three bell peppers and saute well for a few seconds. Add boiled corn and mix well. Add ketchup and salt to taste. Finally add the rice and give it a good mix. Keep it aside.
- Now in another pan heat 2 tspn oil. Add garlic and springonions. Saute for a minute and then add chilli flakes. Add finely chopped tomatoes and cook on a medium flame until tomatoes turn soft.
- Add tomato ketchup, boiled rajma and salt. Add a little water. And mix everything well. Keep it aside
- For the uncooked salsa, mix all the ingredients together in a bowl. Keep it aside.
- For the sour cream also bring all ingredients tother and give it a good mix. Keep it aside.
- Now for Assembling... Take a big bowl. First put Rice with veggies. Then layer it with refried beans. Then add the uncooked salsa and finally add the sour cream and nacho chips for garnish.
