  3. 5 Green chillies
  4. 2 tsp Cumin seeds -2
  5. 2 cups Grated Coconut -
  6. 2 1/2 cups Curd
  7. 2 tbsp Chopped coriander leaves
  8. 1 sprig Curry leaves
  9. 1/4 tsp Turmeric powder
  10. 1/4 cup Roasted Coconut
  11. 3 tbsp Coconut Oil
  12. 1/4 cup Ghee
  13. as per taste Salt
  14. 1/2 cup Thick Coconut Milk
  15. 1 tbsp Roasted Coconut bits
  16. 1 tbsp Roasted cashew, rasins
  17. Common Temper
  18. cup Coconut Oil -1/4
  19. tsp Mustard Seeds -2
  20. 6 Dry red chilli
  21. 2 sprig Curry leaves
  22. Instant Mango Pickle
  23. 1 Mango (cut into small pieces)
  24. as per taste Salt -To taste
  25. 2 tsp Red chilli powder
  26. For Sambar :
  27. 1/2 cup Cooked Tuvar Dal
  28. 2 tbsp Tamarind Paste
  29. as per taste Salt
  30. 1/2 cup Veggies (carrot,beans,drumstick,brinjal)
  31. 1/2 tsp Turmeric Powder
  32. 1 tbsp Sambar Powder
  33. To Temper
  34. 2 tsp Coconut oil -
  35. 1/2 tsp Mustard Seeds
  36. 1 sprig Curry leaves
  37. 1/4 tsp Hing
  38. 1 Dry red chilli
  39. For Aviyal
  40. 1 cup Mixed veggies (Drumstick,Raw banana,Carrot,Yam,Beans)
  41. as per taste Salt
  42. 1/2 tsp Turmeric Powder
  43. For Inji Puli
  44. 3 tbsp Roasted ginger
  45. 1/2 cup Tamarind Water
  46. 1/4 tsp Turmeric Powder
  47. 1 tsp Red chilli powder
  48. 2 tsp Jaggery
  49. For Thoran
  50. 2 cup Grated Cabbage
  51. For Inji Kichadi :
  52. 2 tbsp Roasted Ginger
  53. For Carrot Beans Mezhukupuratti :
  54. 1 tsp Red chilli powder -
  55. each 1/4 cup Carrot, Beans (Chopped into matchstick)
  56. For Olan
  57. 1/2 cup Chopped ashgourd
  58. 2 Slit green chillies
  59. 2 tbsp Cooked red cow peas
  60. For Kootu Curry
  61. 1/4 cup Cooked black chana -
  62. 1 cup Yam,
  63. 1 cup Raw banana (chopped)
  64. 2 tsp Ghee
  65. 1 tsp Red chilli powder
  66. For Erissery
  67. 1/2 cup each Yam,Raw banana (chopped)
  68. For Paruppu :
  69. 1/4 cup Moong dal
  70. For Kalan
  71. 1/2 cup Yam,Raw banana (chopped)
  72. 1/4 tsp Roasted Fenugreek seeds powder
  73. For Paruppu Pradhaman :
  74. 1/2 cup Cooked moong dal
  75. 1/4 cup Jaggery syrup
  76. 1/4 tsp Cardamom powder
  77. For Palada Payasam
  78. 1/2 cup Rice ada
  79. 1/3 cup Sugar
  80. 2 1/2 cups Milk
  81. For Tomato Pachadi :
  82. 1 Tomato chopped
  83. For Rasam
  84. 2 tbsp Cooked tuvar dal
  85. 2 tsp Rasam Powder
  86. 1 tbsp Tamarind paste
  87. 1 Tomato chopped
  88. 4 cups Water -4
  89. For Cooked Rice :
  90. 2 cups Rice
  91. 4 Pappadam
  92. as required Oil -To fry

Steps to make to make Onam Sadya Recipe (Aviyal,Sambhar,Thoran,Inji Puli& Khichdi etc)

  1. For Rice : In 5 L Pressure cooker,add the washed rice and water,cook at high flame for 3 whistle.Once the pressure goes away,open and fluff the rice.Keep it aside
    * For Thoran,Aviyal & Mezhukupuratti : In a 5 L Pressure cooker add 1/4 cup water+2 tsp oil.Side by Side place the thoran veggies,Aviyal veggies and Mezhukupuratti veggies.Add salt on top of the veggies.
  2. Top of the aviyal add 1/4 cup coconut paste.Now add the red chilli powder on top Mezhukupuratti veggies.Cook at high flame for 3 whistle,release the pressure.Remove the veggies carefully individually.
    *Add the grated coconut,Common tadka 1 tsp on thoran,Mix and kept it aside.For aviyal mix the curd,curry leaves and coconut oil.Kept aside.For Mezhukupuratti mix and kept aside.
  3. For Erissery,Olan,Kalan : In 5L Pressure cooker add 1/4 cup water+2 tsp oil,place the erissery,olan,kalan veggies side by side.Add salt on the top of the each curry.
    On top of the erissery,Kalan veggies add the 1/4 cup coconut paste.Cook at high flame for 2 whistle.Release pressure.Remove carefully each item seperately.For erissery mix 1 tsp common tadka and roasted coconut,keep aside.
  4. For Olan mix 1 tsp coconut oil &1/4 cup coconut milk,keep it aside.For kalan mix with common tadka and curd 1/2 cup.kept aside.
    For Sambaram : Mix 1/2 cup curd&1/2 water,salt.add chopped curry leaves&coriander leaves. For Mango Pickle :Mix cut mangoes,red chilli powder,salt &common tadka.
  5. Fry the papadam in hot oil,kept aside.For Inji Kichadi : Mix the roasted ginger with 12 cup curd &common tadka.kept aside
    For Kootu curry &Pachadi :In 5L Pressure cooker add 1/4 cup water & 2 tsp oil,Add the kootu curry veggies and tomato on side by side.add salt on top.On top of the kootu curry add 1/3 cup coconut paste.
    Cook at high flame for 2 whistle.release pressure.remove the each veggies carefully.
  6. For Tomato pachadi,mix the cooked tomato with 1/2 cup curd and common tadka,kept aside.For Kootu curry mix with common tadka and 1 tbsp roasted coconut.
    For Inji Puli :in a vessel boil the tamarind water with roasted ginger,salt,turmeric powder,red chilli powder.once the raw smell goes away add the jaggery and common tadka.keep it aside.
  7. For Sambar & Rasam : In a 5L Pressure cooker add the sambar &Rasam ingredients side by side.Add salt on the top.Cook at high flame for 3 whistle.Release pressure.
    *Remove the sambar ingredients,add common tadka,Required hot water and Tempering ingredients.Remove the rasam ingredients,mix with required hot water,curry leaves& coriander leaves.Keep it aside.
  8. For Paruppu Pradhaman :Mix the cooked moong dal,jaggery syrup,roasted cashew,raisins,roasted coconut bit,cardamom powder,1/2 cup coconut milk,mix it well.
    For Palada Payasam : Roast the ada in little ghee and cook it in milk.Once it cooked well,add the sugar.Once it dissolves and switch off the flame.add the roasted cashew&raisin.
  9. For Moru Kachiyathu : Mix the 1/2 curd,salt,turmeric powder with 1/2 water without any lumps,Boil it,once starts to boil switch off the flame and add the common tadka.
    How To Serve : Place the Banana Leaf,On the top of the left side place the banana,salt,Instant mango pickle,Lemon pickle (store bought),Nendran Chips(storebought)
    Followed by Puli inji,Inji Kichadi,Mezhukupuratti,Thoran,Olan,Aviyal,Kootu Curry,Erisserry.On the bottom of the leaf,
  10. Papadam,Rice with Paruppu curry &ghee.On the right side place the sambar,rasam & Moru kachiyathu in a bowl.
    On the top of the leaf place Tomato pachadi,Kalan,Paruppu pradhaman,Palada payasam,Sambaram in a bowl.
