Biryani is basically a Muslim recipe made by rice ,spices ,dry fruits & non veg . But now a days it becomes so famous that it makes from veggies also . There are so many types but here I made mix vegetables biryani .

- For rice
- 250 gms basmati rice
- 1 tea spoon salt
- 1/2 tea spoon oil
- For marinate
- 1/2 cup boiled soya chunks
- 1/2 cup cauliflower piece
- 2 mid size carrot piece
- 1/2 cup paneer cubes
- 1 tablespoon ginger garlic paste
- 1 tea spoon jeera
- 1/2 cup curd
- 1 mid size capsicum pieces
- 1/2 cup beans piece
- as per taste Salt,
- 1/2 tea spoon red chilli powder
- 1/2 tea spoon haldi
- 1 tea spoon garam masala
- 1 tea spoon kasuri methi
- For biryani
- 4 bay leaf,
- 8 pieces black pepper
- 1/2 tea spoon cinnamon powder
- 4 elaichi powder
- 4 piece clove
- 1 lemon juice
- 1 mid size onion
- 1/2 cup saffron milk
- 2 table spoon ghee
- 4 table spoon oil
- 1 cup chopped fresh coriander
Instructions to make to make Vegetable Biryani
- Wash & soaked rice for 1/2 an hour. Boiled soya chunks, cauliflower, carrot,beans & paneer add in a bowl. Now curd & all dry spices mix into it.
- Leave it for 15 min. Boil rice add salt & some oil. Rice cooked only 75 percent. Now for biryani take a heavy bottom pan add oil. Roast finely chopped onion till brown.
- Keep the fried onion aside. Now add sabut spices in oil roast for 2 min. Now add marinate veggies salt & chilli & roast till cooked proper.
- Now set one layer of boil rice on veggies. Second layer fried onion, third layer saffron milk & coriander leaves. Again set the remaining rice & lemon juice on it. Add some water & ghee also.
- Cover it with lid. Keep heavy weight on the pan. Leave it on low flame for 5 minutes. Rice proper cooked in steam.
- Delicious vegetables biryani is ready. Serve it with curd or salad. We can preserve it 1 or 2 days.
