- 1 tablespoon Ghee

- 1-2 green chillies
- 1 small piece of ginger
- 1 chopped onion
- 1 chopped tomato
- 1/4 cup green peas
- 1/4 cup chopped french beans
- 1/4 cup chopped carrot
- 1 cubed potato
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/4 cup curd
- 10-12 chopped pudina leaves
- 1 tablespoon chopped coriander leaves
- 1/2 cup coconut milk
- 1/2 cup water
- to taste Salt
- For Chettinad biryani masala:-
- 1 teaspoon whole coriander seeds
- 2-3 cloves
- 1 small piece of cinnamon
- 2 green cardamom
- 1 teaspoon fennel seeds
- 1 teaspoon whole pepper corns
- 1 star anise
Instructions to make to make Chettinad veg biryani
- First prepare Chettinad biryani masala. For that grind all spices mentioned in for ' Chettinad biryani masala ' in mixer grinder and make coarse powder. Grind garlic cloves, ginger and green chillies and make paste.
- Wash and soak rice in water for 20-30 minutes.
- In a small pressure cooker heat ghee and oil. Add bay leaf and cumin seeds. Add kalpasi. (Kalpasi is not available at my place. So I didn't use it). Add chopped onion, tomato and chilli ginger garlic paste. Saute till onion turns translucent.
- Add prepared Chettinad biryani masala, turmeric powder and red chili powder. Mix well. Add green peas, chopped french beans, carrot and potato. Mix well and cook for about 2-3 minutes.
- Now add soaked rice (without water) and saute for sometimes. Add chopped pudina leaves, coriander leaves and curd. Mix well.
- Add coconut milk and water. Add salt and mix well. Cover with lid and cook until 3-4 whistles. Tempting Chettinad biryani is ready to serve. Serve with curd or any raita.
