- (1) For Prawns -
- 1 Cup Frozen Shrimp
- 1 TBSP Ginger Garlic paste
- 1 TSP Kashmiri mirch powder
- 1 TSP Red Chilli Powder
- 1/4 TSP Turmeric Powder
- 1 TSP Biryani Masala
- as per taste Salt
- 1/2 Cup Yoghurt
- 1 Bay Leave
- 2 Onions Chopped
- 1 Tomato Chopped
- Handful Coriander leaves finely chopped
- Handful Mint leaves finely chopped
- (2) For Cooking Rice -
- 2 TBSP Clarified Butter
- 1 Cup Basmati Rice (washed and rinsed)
- 2 Bay Leaves
- 3 Cardamom cloves
- 1 TSP Shahi Jeera
- 1 Lemon Juice
- as required Saffron water
- as required Fried Onions
- Handful Coriander leaves finely chopped
- Handful Mint leaves finely chopped
Steps to make to make Hyderabadi Prawns Biryani
- (1) For Prawns -
In a large bowl, combine all the ingredients well. Add the shrimp, mix well. Cover and allow it to marinate for 30 mins. - Heat oil in heavy bottom pan, add onions and fry until just starts picking up golden color. Add bay leaf and sliced tomatoes and sauté on high heat for another minute.
- Add marinated shrimp and mix well. Cook on high-low heat for 5 minutes (do not add any water to it while cooking). Add coriander leaves and mint leaves and mix, cook for another minute. It should not be too dry nor too watery.
- (2) Cooking Rice -
In a large pot, add enough water. Add bay leaves, clarified butter, cardamom cloves, lemon juice, shahi jeera and salt. Bring it to a boil. Add rice to the boiling water and cook until the rice is 70% done. - Now, layer with prawns, fried onions. When the rice is 70% done, using a large colander or slotted spoon take out the rice and layer it evenly over the prawns layer. Sprinkle the melted ghee and saffron water over the rice layer.
- Place a small steel bowl in centre of this biryani with a burnt coal and add 1 tsp pure ghee on this. Immediately cover it with lid to give it smoky flavour to biryani. “Dum’(slow cook) exactly for another 15 minutes. Ii
